The pandemic has opened up a new area for the use of technology in restaurants with the first iteration focused on contactless payments and digital ordering. The next wave of technology companies is focused on operational improvement in the hospitality industry. PreciTaste is an AI vision platform focused on food service optimization in quick service restaurants and fast food restaurants. The company improves the customer experience by increasing restaurant efficiency while reducing waste. Using numerous cameras placed inside and outside the facility, the company’s machine learning software is able to provide predictive analytics for demand forecasting, order forecasting and inventory management. Insights are available on a cloud-based dashboard so operators can manage multiple locations as well as the ordering experience. By integrating on-site data in layers with external data like traffic and weather, PreciTaste can provide demand forecasts that are 95% accurate up to two weeks in advance. Customers using this solution have been able to successfully increase EBITDA by 100% by accurately ordering, staffing and reducing food waste. AlleyWatch caught up with PreciTaste VP of Operations Hauke ​​Feddersen to learn more about the business, the company’s strategic plans, the latest round of funding and much, much more… Who were your investors and how much did you raise? PreciTaste’s $24 million Series A round is led by existing investor Melitas Ventures, a fund that invests in innovative early-stage food and beverage companies, and Cleveland Avenue, a mission-driven investor in food, beverage and technology companies. Additional investors include Enlightened Hospitality Investments (EHI), a growth fund co-founded by Danny Meyer, founder of Union Square Hospitality Group and Shake Shack, and Monogram Capital Partners, a leading consumer-focused growth fund with in outlets including Chewy.com, Oatly and Foxtrot. Tell us about a product or service that PreciTaste offers. PreciTaste is a Vision AI platform for operational optimization in hospitality applications such as quick service restaurants (QSR) and retail food preparation. Developed to increase efficiency, improve customer experience and reduce food waste, PreciTaste’s mission is to become the standard for AI digital food management in fast casual and QSR kitchens. What inspired the start of PreciTaste? PreciTaste’s first product was the Virtual Baker®, which now manages the in-store baking processes of Europe’s largest retail establishment. Our growth funding came with the food industry’s increased digital focus on QSRs and fast-casual restaurants driven by the pandemic and increased digital focus since then. This Series A round will help fund the continued expansion of our foodservice systems across sectors. What makes PreciTaste different? The largest food chains apply PreciTaste to combat the challenges of labor, quality and sustainability in the industry. With more than 1,500 food AI systems deployed as of 2020, PreciTaste has the infrastructure to deliver when it comes to fully managing food digital AI and navigating the complexities of every kitchen. We also have real-world experience bringing sensors and computing to the most demanding and busy kitchens, which has led us to build an infrastructure that can efficiently learn and manage each individual food service operation and is highly scalable – something that no other technology in the world food AI there is space. What market is PreciTaste targeting and how big is it? We target high-end fast-casual and fast-casual restaurant chains. What is your business model? We have a platform that can adapt to any operation and is highly scalable. Flexible e software applications enable use cases such as on-demand cooking and ingredient preparation, real-time task management or order accuracy, which are specific to our customers’ individual needs. How are you preparing for a potential recession? The pandemic has increased the need for digital optimization in food chains. While front-of-house ordering systems have been optimized, back-of-house systems are still behind the curve. With or without a potential recession, challenges such as labor shortages and rising food prices will continue to put increasing pressure on the need to automate processes.

What was the financing process like? We were amazed by the support and great advice we received from all the VCs. Three out of four of our investors came through the recommendations of other funds. Never having raised money before, I thought of the industry as a pool full of sharks and was pleasantly surprised that most of the early, invaluable support we got came from funds that didn’t invest in us. What are the biggest challenges you’ve faced in raising capital? The biggest challenge was to pioneer our unique service offering. We were able to immediately determine whether or not the VC we pitched “got” AI management as a solution to the industry’s most pressing problems. There was so much interest from those who understood our value that we doubled our initial funding goal to assemble a dream team of investors to support our growth. What factors in your business made your investors write a check? They are convinced of PreciTaste’s ability to drive sales and profits by solving the most critical kitchen management problems, and that our technology can pay for itself through food waste savings and is highly scalable. Thus, they believe that PreciTaste is an advantage that every quick service kitchen needs.

What are the milestones you plan to achieve in the next six months? We have expanded to over 100 employees across Munich, Mumbai and US locations, with plans to add another 25 team members in the next quarter. What advice can you offer New York companies that don’t have a fresh injection of capital in the bank? You are in the best place in the world to raise capital. Be out there talking to everyone – even if you know you don’t fit their category. Every conversation hones your presentation and product. So, keep your ears open for any feedback. Your main goal is obviously funding. But a referral from a friend can be just as valuable. Where do you see the company now going in the near future? With $24 million in Series A funding for growth, PreciTaste is fast-tracking its proprietary Vision AI implementations to continue its expansion across food chains. Our mission is to be the standard for AI digital food management across all sectors, while fostering sustainability. What is your favorite outdoor restaurant in New York? Before the pandemic, we rented a soccer field on the East River every week. Right next to it is Fornino Pier 6. Excellent pizza and an unbeatable view of the biggest city in the world.
